Taking a good recipe and altering to my new healthier & kind diet

sautesauteadded in veggie stock, water, sherry and all the veggiesI will add some cut up pasta and of course I have my "bad" food, a delicious loaf of  ciabatta bread topped with olive oil & sprinkled with salt (it's all natural) BUT it's WHITE. Soup with the Pasta in it!!


To down it all I made ice cubes with raspberries and will have them in a glass of water!

RECIPE
I took the French Spring Soup recipe from the Pioneer Woman http://www.thepioneerwoman.com/
and I did not put barley in it, no butter and no half and half ... I used vegetable stock and added an extra green (Kale) and I added 1 can of whole tomatoes (4 in the can).

Put some EVOO on the bottom of a large pan
1 large leek
1 whole yellow onion (oh, and I used 2 small shallots and 1/2 of the large, yellow onion)
8 oz. of cremini mushrooms, sliced
3 whole new potatoes (chopped)
1 bunch of fresh asparagus, cut into small pieces
2 large carrots chopped (I used several smaller ones)
1 quart of Veggie broth
9 ounces of fresh spinach, roughly chopped.
sea salt and ground pepper
fresh dill (I added a small bunch in the recipe called for only 1 pinch--but I am a huge lover of FRESH dill)
the recipe called for 1/3 cup barley (I did not add this)
What I will do instead is add a tiny bit of whole gran THIN pasta.
the recipe called for 1 cup of half and half, I did not add that or the 4 tablespoons of butter
1/4 cup of sherry (optional, I used it;)
I also added one can on whole tomatoes (there were 4 in the can)

In a large pot, saute the leeks, onions and garlic and saute until tender. Add the mushrooms and saute for two more minutes.Add the potatoes, carrots and asparagus and saute for two more minutes.

 Add the Veggie stock or water (water if you make it with the half and half and butter) if you use veggie stock, not much water will be needed. Now add in your salt, pepper, tomatoes, bring to a boil. Reduce heat to low and simmer until carrots and potatoes are tender. When they are done add in your spinach, sherry (if you use her recipe you would add in the half and half at this point too).

You can sprinkle with grated cheese (parmesan or another) and serve with a crusty bread.

Changing my ways...it is not easy!

Ok. I am TRYING hard to eat better so that I can feel better. It's been two days now (almost 3 full days) of no dairy and meat (OK, confession, had to have the half 'n half in my coffee, splashes:)

Starting Thinking Better About My Food Choices

After watching Oprah's show on Thursday, March 11th I started to re-think my food choices. I always felt I ate pretty healthy .... then I seen the show!!! What an eye opener! I encourage you to go to her website and view that day's show!

Tonight I made Halibut, plain couscous and steamed broccoli.

I bought two books and the Food, Inc. Movie for my family and friend to watch!! I don't plan on stop eating meat (and that is not what the movie promotes) but rather eat less of it because it will cost me more now to buy free range meats! I am DEMANDING change in our food supply by doing this and hope others will follow me as I am following SO many others!

As of 3-23-10 I have not had ANY meat and no dairy with the exception of each morning I did put a splash of half and half in my coffee. I looking and feeling better! Can't believe the change in just a short time. My GERD is becoming easier to live with and with FAR less pain!!! I am thrilled to say in the least. Speaks volumes!!!

I am starting to think about new beginnings! Gardening, new recipes to try, some crafts I have been putting off and of course new spring makeup, clothing and hair cuts!

An Easy & Healthy Sandwich!

This is an easy sandwich that I seen on another blog, she had added lettuce and tomato to hers which sounds even better but I am unable to eat those two things right now.



Humus, cucumber, avocado, pitted black olives (I bought Greek Style)...one could add flax seeds to this or sesame seeds!

Made Italian Sausage with Mushroom Risotto For Dinner! YUM! YUM!
