Want a Delicious and low cal drink?

OK, it's just about summer and I LOVE a good Margarita! I've been making and drinking theses for a few years now and just one word...YUM!!!!!

•2 oz of Clear Premium Tequila (count 1, 2 while you pour, no need for measuring)

•Tiny splash of Orange Liquor

•Juice of 4 Fresh Lime Wedges


1.To serve on the rocks, combine all ingredients over a glass of ice and garnish with a lime wedge

Want a fast breakfast, lunch or pizza topping?



In a large skillet put some EVOO in the pan, cut up some garlic and shallots (you use yellow onion, scallions, whatever you have on-hand).

I cut up:

-bell peppers
-an eggplant
-firm tofu
-parsley
-basil
-portabella mushroom caps

Added in:
sea salt and ground pepper, rice vinegar, Tamari (soy sauce), dried dill, organic frozen peas and grated some fresh ginger.

You can add asparagus, red cabbage, red bliss potatoes, etc. again, using what you have and like!

An Awesome Lunch (fast, easy and fresh) Flat Bread Pizza

Took a whole grain wrap (110 calorie) roll up and spread it with Mediterranean Tapendale. Then topped with shallots, mushrooms, Kumato (a brown tomato, insanely delicious flavor), put some baby spinach, sliced orange bell pepper, basil, ground peppercorns and some EVOO. I brushed the pizza pan with EVOO, set it on the pan and it went into an oven preheated to 350 degrees, took less than 20 minutes from start to finish!!! YUM! YUM! YUM!!! You can use vegan cheese or something like goat cheese or another creamy cheese! Be creative and most of all, have fun!!!

Vegan Chocolate Peanut Butter Cups BETTER THAN A REESE'S CUP!!

This is from the book The Kind Diet on page 183
I will say it's super easy and no oven required (my favorite part)
MAKES 12

-Earth Balance Butter (non butter:) 1/2 CUP
-graham crackers (about 10 crushed up) put in a plastic bag and bang them with a meat tenderizer!
-homemade peanut butter (chunky) or you can buy some organic in a jar you will need 3/4 CUP
-maple sugar (or you can use organic granulated sugar) 1/4 CUP
- Grain Sweetened, nondairy chocolate (I Just bought Trader Joe's brand of chips in a bag) 1 CUP
-and if you like you can add walnuts, pecans, almonds, etc. on top (I did all of those plus made a few of plain because my son prefers no nuts in his:) Approx. 1/4 CUP CHOPPED UP
-Rice, soy or nut milk ( I used Almond Milk) 1/4 CUP



Line a 12-cup muffin tin with paper liners (if you can use try to find unbleached ones made from recycled paper).

Melt the Earth Balance in a small saucepan over medium heat. Stir in the peanut butter, graham crackers crumbs, and the maple sugar and mix well. Remove the mixture from the heat. Evenly  divide the mixture, approximately 2 tablespoons per cup, among the muffin cups

Combine the chocolate and almond (rice or soy) milk over medium heat until chocolate is melted. Place in the refrigerator to set for at LEAST 2 HOURS before serving! Simply Divine!!!

I made my chunky peanut butter the 1st time in VitaMix and the 2nd time in my simpl, Magic Bullet.


Here is the chocolate I used (it was very good).

Last Night's Stir Fry-Tempeh and Veggies

Along with some EVOO, low sodium soy and ginger sauce, white wine and fresh grated ginger and lemon juice....I added: Organic Tempeh, mushrooms, orange bell pepper, spinach, scallions, chopped garlic (and I had some steamed broccoli that I made for DH and DS and threw that in at the very end)




This had so much texture, color and taste! It really did surprise me:)
